(My snow day go to was always potato soup…I love potato soup but it’s so full of fat and carbs it is certainly not on my current eating plan….)
This is a perfect recipe for a cold day, it will fill you up and you have nothing to feel guilty about! Plus with all the veggies you are doing your body a tremendous favor!
White bean and kale soup
2 cans of organic no salt added Northern beans
1 small red onion
4 cloves of garlic minced
6 or 7 medium size mushrooms
4 cups of kale chopped
2 cartons of organic no salt added chicken broth or veggie broth
Optional you can add shredded chicken
In your pot add a table spoon of organic coconut oil, onions and carrots; cook for 3-5 mins. Add garlic and mushrooms and cook for another 3-5 minutes add a pinch or two of salt. Pour in the broth and beans…simmer for about 20-30 mins and then add your kale…simmer for another 5 minutes and serve.
